Coronado Springs is undergoing a massive overhaul, which will include a brand new tower and the addition of 500 rooms. The new tower will boast a rooftop restaurant, among other things. Today, Disney Meetings has released images of a new restaurant which is scheduled to open in 2019 called Villa del Lago. The new restaurant will be on the lake, which you’ll be able to get to via a new series of bridges that will connect areas of the resort.
Villa del Lago means house on the lake, so it’s not that inventive of a name. The restaurant will serve “light fare” and cold drinks which will more than likely make it a good place to get some cocktails and grab some appetizers before moving on to some place else for dinner…like maybe that new restaurant on top of the 15 story tower?
Meanwhile, Rix Lounge has been transformed into Rix Sports Bar, and now offers more space for dining instead of just catching a quick drink. They now have a full menu for breakfast, lunch and dinner, featuring a huge array of sandwiches, appetizers and entrees, most of which have a Tex-Mex flair.

The big news with the new menu is the specialty cocktails, and the selection of local craft brews. Surprising enough, Disney hasn’t created their own brewery with their own craft beers…yet.
Reservations for Rix are now open on the official Disney website, while Villa del Lago will open sometime in 2019.
